Biryanies
Originating from the extravagant kitchens of Royal Persia, Biryani dishes were taken to India before the Raj by the first Indo-Muslim rulers. Still regarded as the only wedding feast in the Indo-Bengal sub-continent, they combine traditional spices cooked in ghee with special fried rice and are served with a medium hot vegetable curry sauce.
